¾ cup unroasted sweet almonds

Half a glass of dates

Half a handful of dried sweet cranberries (optional)

2 cups raw unsalted cashews

½ cup of coconut oil

Quarter glass of water

1 organic lemon

½ cup maple syrup

Organic fresh raspberry and lemon zest

Preparation of

Pull the almonds in the robot and make them into small pieces.

After grinding the almonds, remove the seeds of the dates and add them to the almonds. If you are going to use cranberries, you can also add cranberries at this step. Process the dates, cranberries and almonds in the processor for a while.

After the mixture shrinks, if it is too dry, you can add 2 tablespoons of water. After adding water, mix again and make sure that it has a sticky consistency. This mixture will form the base of the cheesecake. Spread this material on a mold of your choice. Make sure it's not too thick or too thin.

For the cheesecake filling, soak the cashews in 1 glass of water the night before. Drain well the next day.

Add the cashews, coconut oil, lemon juice, lemon zest, maple syrup, and water to the bowl of the robot. Stir this mixture until it is well combined.

For this, it will be sufficient to mix at high speed for about five minutes.

Without waiting for too long, pour the mixture on the base material you have laid in the mold and ensure that it takes a flat form with the help of a spatula. Garnish with lemon zest and raspberries on top.

After keeping the cheesecake in the freezer for 1-2 hours, place it in the lower part of the refrigerator and serve it when it is ready.
