A DIFFERENT BABY FOOD RECIPE: SPINACH AND PUMPKIN RISOTTO

Spinach and Pumpkin Risotto Recipe for Babies

Ingredients:

  • 2 cups organic chicken broth
  • ¼ pumpkin
  • 1 teaspoon organic olive oil
  • 1 cup Arborio rice
  • 1 bunch organic spinach

Instructions:

  1. Peel the pumpkin and cut it into small pieces.
  2. Boil the pumpkin pieces for about 10 minutes. They should be soft but still hold their shape.
  3. Place a small pot on the stove and heat over medium heat. Add the olive oil.
  4. Once the oil is hot, add the Arborio rice. Stir and cook until the rice becomes slightly translucent.
  5. Gradually add the chicken broth, stirring constantly so the rice absorbs the liquid evenly.
  6. After a short wait, add the chopped spinach and the cooked pumpkin to the rice mixture.
  7. Depending on your baby’s age and chewing ability, you can either serve the risotto as is or blend it into a purée.
  8. If you prefer a purée, use a blender to mix the entire dish until smooth.
