HEALTHY SNACK FOR CHILDREN: BROCCOLI AND CHEDDAR CHEESE NUGGETS

Children over the age of 1 often want light meals or snacks throughout the day. Healthy snacking is a topic every parent has to consider thoroughly—balancing nutritious ingredients with flavors that appeal to kids can be challenging. However, vegetable-based snack recipes that are just as enticing as traditional snacks can offer a great solution.

This recipe for broccoli and cheddar cheese nuggets is ideal for children to enjoy in small pieces. With vegetables and dairy as its base and an extra flavor boost from breadcrumbs, it's a delicious and wholesome option. One important note: this recipe contains eggs. If your baby has just turned 1 or if you suspect an egg allergy, be sure to consult your pediatrician. In cases where eggs cannot be used, you can replace them with fruit or vegetable purée.

Broccoli and Cheddar Cheese Nuggets

Ingredients

  • 500 grams broccoli
  • 1 cup breadcrumbs
  • 1.5 cups grated cheddar cheese
  • 3 large organic eggs or 5 organic egg yolks
  • (Optional: Replace eggs with any fruit or vegetable purée)
  • Enough organic olive oil to lightly grease the baking tray
  • Optional spices: garlic powder, paprika, basil, oregano, etc.

Instructions

  1. Steam the broccoli. Steaming is preferred to preserve more vitamins.
  2. Preheat your oven to 180°C (356°F).
  3. Lightly grease a baking tray with olive oil.
  4. If you boiled the broccoli, drain and chop it.
  5. In a bowl, combine the chopped broccoli, eggs (or fruit/vegetable purée), cheddar cheese, and breadcrumbs.
  6. Mix well using a spoon or your hands until all ingredients are thoroughly combined.
  7. Shape the mixture into small nuggets or strips and place them on the greased baking tray.
  8. Bake in the oven, flipping the nuggets once one side is golden to ensure both sides cook evenly.
  9. After 20–25 minutes, remove from the oven.

You can shape the nuggets into bite-sized pieces that resemble chips or make larger portions and serve them with yogurt.
